This is a cocktail that pairs the subtle apply flavours of an apple skin infused gin with the delicate grassy notes of pea shoot cordial. Making a sweet and garden fresh sparkling cocktail that's both sustainable and delicious. Perfect for a summer day.

Even though this is a 3 ingredient cocktail that’s easy to recreate, there is a little bit of prepping involved. But don’t worry, the prep is easy and it makes the end cocktail that much more delicious knowing you’ve put time and prep into everything that’s gone into it. This cocktail requires two prepped ingredients in particular, an apple skin infused gin and a pea shoot cordial. 

Apple skin infused Gin

For the recipe, you will need to first prep an apple skin infused gin. The apple infused gin will give a subtle apple flavour to the cocktail which pairs beautifully with the pea shoot cordial. You can check out the full recipe on how to make the apple skin gin here.

Pea shoot cordial

The next thing you will need for this recipe is a pea shoot cordial. Easy to make and takes less than 40 minutes from start to finish, which the majority of is just waiting for the pea shoots to infuse. The actual cook time is only 10 minutes.

Green Fingers Cocktail Recipe

Now you have your apple skin infused gin and pea shoot cordial prepped, it’s time to get creative and enjoy the fruits of our labour with this here green finger cocktail.

Pea shoot cocktail recipe

Ingredients

  • 50ml Apple Skin infused gin

  • 20ml Pea shoot cordial

  • 100ml Soda water

Method

  1. Combine Apple skin gin and pea shoot cordial in a mixing jar filled with cubed ice.

  2. Stir well to combine then add in the soda water and stir lightly once more.

  3. Strain into a rocks glass over a large cube of ice.

  4. Garnish with a few pea shoots on top of your large ice cube.


Variations

Looking for a variation on this cocktail? Try replacing the soda water with light tonic water. Trust me, it’s a taste sensation. 

You can also serve this in an ice cold wine glass filled with ice and top with 50ml of English sparkling wine for a tasty sparkling wine twist.
