The lychee syrup is super easy to make and will last for up to two weeks refrigerated.

Combine 200grams of white sugar with 200ml of water in a saucepan and bring to a slow boil stirring constantly until the sugar has fully dissolved.

Add 4 peeled lychees and bring the heat down to a simmer. Allow to simmer for 10 minutes then remove from the heat and allow the lychees to sit in the syrup for a further 40 minutes.

Strain into a bottle and you’re good to go.

Advanced Lychee Cocktail

Ingredients

  • 20ml Lychee infused vodka

  • 10ml Citric and malic acid solution

  • 60ml New Zealand Sauvignon Blanc

  • 50ml Lightly infused cucumber water

Method

  1. Pour everything into a soda siphon and place in the fridge for a minimum of 1 hour to cool completely.

  2. Charge the soda with 2 Co2 cartridges, shake and place back into the fridge for another hour.

  3. Release the cocktail into a tall glass over one large shard of ice and garnish with a single sprig of elderflower and pour over edible silver pearls.

Not only is this deliciously refreshing but it has a freshness about it. It’s not sweet, it has a luxury charm to it and the New Zealand sauvignon blanc gives a light note of elderflower that pairs beautifully with the lychee and cucumber.

A lychee martini to put all other Lychee cocktails to shame - with grapefruit, gin, and lychee syrup.

Instructions

  1. Pour everything into a cocktail shaker with ice.
  2. Give it a good solid shake then fine strain into an ice cold coupe.
  3. Garnish with a spiked peeled lychee and spritz of edible gold (optional)

Notes

For the garnish, run a knife around the top of each lychee so you pierce the skin and not the fruit. You should then be able to pull the top off. If you're spraying with gold, make sure you use EDIBLE gold. Recommendation below.
