Ever drank cereal milk? Of course you have, its the best part of any bowl of cereal. Well I took that milk and shaken it into something that can get you drunk. I am of course talking about a cereal milk Espresso Martini.

Not only are we going to be mixing up cereal milk into our cocktail, but we are also going to be infusing the Espresso Martini directly with kelloggs corn flakes - by infusing the espresso itself.

If all that wasn’t enough to get you excited about brunch cocktails again. We are also going to be serving the cocktail atop of a bowl of cereal. That’s right, these glasses have a bowl layer which we are going to use to serve a bowl of kelloggs cornflakes…

Who needs smashed avocado and mimosas when with every sip of a cereal espresso martini you can also have a spoon of corn flakes?

Using Cereal Milk in Cocktails

Kelloggs corn flakes may just be one of the most basic breakfast foods. Within restaurants we are increasingly seeing more and more “fancy” dishes for breakfast. New ingredients, exotic flavours, things we cant even pronounce. I mean how do you even pronounce huevos rancheros and where has the full English gone?!

Now i’m not saying I have a problem with fancy food for breakfast. However, I have been known to partake in the finer things in life once in awhile, see how the other side lives. If you know me or my style of drink creating, you will know I do like to play of perception and flavour.

One thing I love to do more than anything is take what may be considered “basic” or something with a “bad reputation”, then twist it with something more luxurious. I’ve previously done this with a White Russian, a cocktail synonymous with student nights out.

Not the first cocktail that springs to mind when you think of luxury is it. However, I milk washed it, clarified it, served it up straight and by the end, that cocktail got me into the global semi-finals for one of the luxurious cocktail competitions in the world. The Beluga Signature Competition. You can see that UK final here. I’m the one who looks out of place with a Fabergé egg. I did it again more recently when I milk washed a Jam Donut Negroni.

And now, I’m doing it with breakfast. Taking the most basic (yet delicious) breakfast available, the humble kelloggs corn flakes. And infusing it into one of the most basic brunch cocktails (the Espresso Martini) to create something that boarders basic and fine dining. The kelloggs Corn Flakes Infused Espresso and Cereal Milk Espresso Martini, or as I’m calling it for short - The Cereal Drinker.

Milk Inspiration

Just a note on some of the inspiration here. Awhile ago I became aware of the American chef Christina Tosi whilst watching chefs table.

Christina was working within the fine dining scene, with the thought that to be the best chef, you have to work at the best restaurant, and the best restaurant is the most expensive restaurant. When she released that wasn’t the life for her. Style over substance and all that. She moved on and ended up setting up the small pastry bar that is New York cities milk bar. Which then became world renowned due to its “Cereal milk soft serve ice cream”

An idea so simple yet so delicious. Full of flavour and nostalgia.

It made me think about how I can incorporate something similar into a cocktail, which where this idea stemmed from.

The Glassware

What makes this cocktail different (other then the fact its infused with cereal) is the glassware. You could serve it in a chilled coupe, but its the cereal beneath the cocktail that makes it interesting. These glasses are pretty damn cool and cheap to buy. The ones I use are from Amazon which you can get here from Amazon UK or here from Amazon USA.

Ingredients

Instructions

  1. To make the sugar syrup, combine equal parts sugar and boiling water. Stir and allow to cool.
  2. To make the cereal milk, simply steep cereal in milk for 5-10 minutes then strain out the cereal. You can use any cereal you like, however cornflakes work great and is what I used for this recipe.
  3. For the cornflakes infused espresso, pour espresso over cornflakes and allow to infuse for 5 to 10 minutes, the same as you would with the milk.
  4. Add all your chilled ingredients to a cocktail shaker with ice and shake well.
  5. To serve, you will need one of these bowl glasses. In the bottom layer, add your cereal and milk, add the top layer and strain out your cereal milk Espresso Martini.
  6. Garnish with a spoon and 3 coffee beans.
