Joe Wicks veggie lean in 15 is one of those cookbooks I’m sharing recipes from. Today's is his creamy dreamy butternut squash pasta. Something I’ve made quite a lot, in-fact, it's one of the cookbook recipes I’ve cooked the most. And why?

It’s easy

There's no doubt about it, pasta is one of the easiest things to cook. However, when it comes to making your own pasta sauce the whole process becomes somewhat tedious. 

Having to make your own sauce, as delicious as it can be, can take away ease. But this butternut squash sauce is super easy to make.

It’s Quick

Having a meal that takes 15 minutes to make is always a big plus. It’s good to have those 15 meals in your cooking repertoire for those days when you just really can’t be bothered.

It’s Delicious

And finally, why I love this recipe so much is because it’s so damn delicious. Creamy, dreamy and cheesy are the perfect ways to describe this as its exactly what I think whilst eating it!

Sometimes its the most simple and easy to cook recipes that turn out to be the most delicious and this is no exception. Even though it’s super simple, it doesn’t lack flavour of any kind. It is without a doubt, pasta perfection.

Step by step instructions with photos

1) Place two saucepans of water on to boil. Chuck the butternut squash pieces into one of the pans and cook for 8 minutes or until soft. In the second pan drop in the shell pasta and season the water with salt, cook the pasta for 1 minutes less than packet instructions.

2) When the butternut squash is soft, drain it and tip into a blender along with the garlic clove, veg stock, cream, smoked paprika, nutmeg and a good pinch of salt and pepper. Blitz to a smooth creamy sauce.

3) Drain the pasta in a colander, tip back into the saucepan and stir through the butternut sauce and parsley. Spoon into your bowl and top with grated cheese and parsley sprigs.
