If you’ve stopped by Smartblend before then you will probably know that I love me a Joe Wicks recipe. Joe Wicks is most known for being the nation's P.E teacher with his quirky engaging work outs and raising unbelievable amounts of money for charity. 

However, other than making the nation sweat, Joe Wicks has another passion, making the nation dribble, With his quick, healthy and delicious food recipes.

Sure, he isn’t a professional chef, but that's what makes his cookbooks so great. They are easy to understand and easy to follow. No need for previous chefy knowledge or techniques. 

And of course, this is Joe Wicks we are talking about. So you can expect the recipes to have some health benefits as well! Today's recipe will be taken straight from his lean in 15 veggie cookbook. A cookbook which I’ve previously done recipes from, such as this baked leek and mustard gnocchi and his filo-tastic red pepper and feta pie. Today however, it’s all about his Tex Mex corn and sweet potato salad.

Healthy Recipe

With Joe Wicks in the mix you can assume this is going to be a healthy recipe. What I love about his recipes are that they are healthy without a in your face “health health health” type of attitude. 

They’re fun, they have flavour, they’re a little bit naughty but just healthy enough to make you feel good about yourself. I mean this recipe is a salad. Even an unhealthy salad is still a salad. So you feel good about having it.

If you’re looking to prep your waistline for Christmas, or just looking to kick start your health kick this is the perfect recipe. It’s also great if you’re struggling to stay motivated with your health kick. If you’re getting bored of eating the same bland foods everyday and just want to mix it up, having this is perfect for that.

Quick Recipe

It has it in the name “Lean in 15” They are mostly 15 minute recipes. So no need for faffing around with hours of preparing and slow cooking. You could easily squeeze one of these recipes in on the fly.

This salad recipe is no exception. Even though it's not your typical boring “cut a few veggies and mix in a bowl” type of salad and there is some cooking involved, it's still super quick.

Vegetarian

Another plus for all you vegetarians and veggie curious people out there not so much if you are not this recipe is vegetarian is that its vegetarian. In fact everything in this lean in 15 cookbook is vegetarian, as it is his veggie lean in 15 version.

Most vegetarian cookbooks are filled with pasta and curry recipes. Having one that has an American-style, burgers, brunchy foods and bakes is just refreshing to have about.

Delicious salad recipe

Let’s be honest… Salads are great for the health benefits. Low calories, great for getting your nutrients in and so on and so on. But for the most part, they're not exactly tasty. It’s okay, you can say it. Salads offer little to no flavour.

However, this salad recipe is truly delicious. Believe me, I like many others have taken to health in lockdown and tried kick starting my health kick with salads. Which after a week has just ended in a dominoes two for Tuesdays. 

After all, there's only so much leafy blandness one man can take.

This however, is a masterpiece of salads. It's absolutely delicious. I’m eating it for the flavour and not the health benefits, the healthy side is just an extra benefit.

Joe Wicks Tex Mex and sweet potato salad recipe with Halloumi

Step by step instructions with photos

1) Put the sweet potato and lime wedges in a microwave bowl. Cover with cling film and zap on high for 10 minutes until completely cooked.

2) While the sweet potato is cooking, melt the coconut oil in a frying pan over high heat. Sprinkle in the cumin and chilli powder and cook for 30 seconds until fragrant.

3) Tip in the sweetcorn and fry for 2 minutes to cook off the water left in the sweetcorn. Then tip into a bowl.

4) Put the frying pan back on a high heat, lay in the halloumi slices and fry for 2 minutes on each side until the cheese is super crisp.

5) Meanwhile, mix the tomatoes and coriander through the sweetcorn mix.

6) Come back to the sweet potato, which should be cooked now. Remove the lime, squeeze the juice out over the sweet potato, then stir through the sweetcorn salad. Be careful removing the cling film. The hot steam escapes quickly and can burn you!

Season everything with salt and pepper then pile onto a plate.

Lay the avocado and halloumi slices on top of the salad then scatter over the popcorn for extra crunch if using.
